2*0*0*9

I stole this idea from Mara over at M Loves M…(if you haven’t visited her.. you should!)
Here are 9 Highlights from ’09!
On January 20th, 2009 I got my Budman. I purposely went on this day (inauguration day) because I hoped that everyone would be to focus on the T.V to bother going to the SPCA. I was the first one in line when they opened!

In February, Chris and I went to Boston for a weekend. It was super cold but the food was amazing, and we had a really great time.
In June, I was in my first real car accident. A silly old woman pulled out of the bank and t-boned me (on the way back from the dog park with bud!). It ended up totaling my car and making the month of June pretty miserable.

In July, Chris and I went to his grandparents house in Maine. We go every year to celebrate the 4th. It was Buddy’s first 8 hour car ride and trip to the ocean!

In August, Chris and I went camping for a few nights with his parents on Saranac Lake. We live in upstate NY,  and Saranac Lake is part of the Adirondack Park. We aren’t the best campers. We forgot to bring our tent, and our blow up mattress…(two KEY elements when camping). It also rained for about 90% of the time that we were there. Anyway, it was a beautiful area, and I would do it again…(with a tent..mattress & some sun).

October was a big month. Not only was it when I started this blog, but it was also my 21st birthday and Chris and I’s 3rd  anniversary.

So. I hope that everyone out there in the blogosphere enjoys this uber long post.
I would love to wish everyone a Happy New Years!
Thank you all for following, commenting, & enjoying my blog. You have no idea how good it feels to wake up to a comment!

Everything Julia

Have you seen this movie? I love it! I originally saw it in theaters, and then gave it to my mom for Christmas. This movie makes me want to cook everything, and cook everything with mounds of butter. It’s a great story and is very inspiring. I would love to attempt something like Julie Powell, nothing as crazy as Julia Child’s cook book.. but perhaps something a little smaller? If you haven’t seen the movie… you should!

P.S  I’m also reading “My Life in France” by Julia Child.

So far it has been good! I’ll keep you posted. :)

Castles & Coastlines

Can you guess where these pictures are all from?

Find out, here.

Deliciousness of the Day

Chris and I had made these a few weeks ago, but I totally forgot to upload the pictures! I had posted about these before, but this is our attempt at crab rangoons. They came out so good! They were really simple to make too. I wouldn’t say that they are healthy… but they would totally work as an appetizer for a New Years bash!

Whatcha Need:

12 ounces of cream cheese (room temp)
50 wanton wrappers
1 cup imitation crab meat (or canned)
2 green onions (minced)
¼ teaspoon garlic powder
½ teaspoon soy sauce
1 egg (beaten)
oil (for frying)

How to do it:

Step 1: In a bowl cream the cream cheese, soy sauce, green onions and garlic powder. Stir in the crab meat (if using imitation crab it should be chopped into pieces).

Step 2: In a separate bowl beat 1 egg. Lay out a wanton wrapper so it forms a diamond shape and place 1 teaspoon of filling just below the center of each wrapper.

Step 3: Brush the opposite corners of the wanton wrapper with the egg mixture. Fold over the edges of the wrapper to form a triangle and seal tightly.

Step 4: Deep fry the rangoons in batches at 375 degrees for 2-3 minutes or until golden brown.

Deliciousness of the Day

I will be attempting to lighten up what
I’m eating after eating far to much over the holidays.
Check out this yummy recipie.
One serving is just over 300 calories!
Whatcha Need:
1 pound(s) fresh or frozen gnocchi
2 tablespoon(s) butter
2 medium shallots, chopped
1 pound(s) zucchini (about 3 small), very thinly sliced lengthwise
1 pound(s) cherry tomatoes, halved
1/2 teaspoon(s) salt
1/4 teaspoon(s) grated nutmeg
Freshly ground pepper, to taste
1/2 cup(s) grated Parmesan cheese
1/2 cup(s) chopped fresh parsley
How to do it:
Bring a large saucepan of water to a boil. Cook gnocchi according to package instructions until they float, 3 to 5 minutes. Drain.
Meanwhile, melt butter in a large skillet over medium-high heat. Cook until the butter is beginning to brown, about 2 minutes. Add shallots and zucchini and cook, stirring often, until softened, 2 to 3 minutes. Add cherry tomatoes, salt, nutmeg and pepper and continue cooking, stirring often, until the tomatoes are just starting to break down, 1 to 2 minutes. Stir in Parmesan and parsley. Add gnocchi and toss to coat. Serve immediately.
