I don’t even know who is playing in the super bowl. Don’t hate me. It’s not that I won’t be watching, because I will! But I have always loved the super bowl for the commercials and the food. Who is with me?
This year I will be spending Sunday with Chris and our families. Generally there is a lot of game day food (pizza, wings, other cheese filled dips, etc.) but this year I will be making one of my favorite waist friendly favorites while I watch the big game (or the commercials, at least). My friends at Redpack Tomatoes contacted me recently and wanted to know if I would be willing to share my favorite super bowl recipe, so friends…here it is!
Game Day Chili
Heat olive oil in a large saucepan over medium heat. Chop onion, green pepper, jalapeno, and garlic then add to saucepan. Cook and stir for about 5 minutes. After the vegetables have cooked down a bit (about 10 minutes) add your turkey meat and combine with vegetables (I have not had any problems cooking the meat this way, you can also cook it first in a separate skillet if you prefer).
Season with chili powder, paprika, cumin, oregano, red pepper powder, salt, black pepper, and the secret ingredient: chocolate. Stir in beer, Worcestershire sauce, liquid smoke, can of Redpack tomatoes. Partially cover and simmer for about an hour.
Stir every 10-20 minutes
Add hot sauce to taste and continue cooking for 5 – 10 minutes longer.
Remove from heat and let cool for 5 minutes before serving. Serve with desired toppings (cheese, sour cream, crackers).
This can be left bubbling on the stove on low for quite a while, just make sure you stir it every once and a while, or the bottom of the pan may burn!

Saturday morning started bright and early for presummit registration. I had the pleasure of helping Heather, Julie and Meghann prepare for all of the great ladies (ahemm and one gentleman) that attended the summit. I only helped at the registration table for a bit before I moved into the ballroom and grabbed some breakfast! I was excited to see who the winner of the Wild Harvest breakfast challenge was, it was such a great experience! Breakfast that morning was so good! I helped myself to a little bit of everything before settling in at a table for morning introductions.
One person that I ran into this weekend was another local upstate NY blogger, Courtney. We had exchanged a couple of tweets before, but never met in person. It was great to finally meet her, I hope we can get together soon! I was live blogging one of the first sessions of the day, so I wanted to make sure that Amanda and the room good to go.
After breakfast I moved into the Hosting a Virtual Challenge session room. I learned SO much from Amanda! Not only did I learn a lot of different tools you can use when hosting a challenge, but I realized that you can host a challenge in whatever means something to you. It was a great discussion, I was happy to be there!
After the first session I stuck in my awesome front row seat and got ready for the next session, blogging with brands. I don’t have much personal experience working with specific brands, so found this panel to be very informative! Check out this great post by Madison of Pilates Makes you Happy. She did an awesome recap during her live blog! After the second discussion it was lunch time! Lunch was super tasty… but I couldn’t eat much, I was nervous for the panel that I was on after!
When Heather asked me if I would be interested in joining Courtney and Chase on a panel for newbie bloggers I was shocked and super excited. I have blogging for a while and felt like I had a side of blogging that others would be interested in hearing. I think that it went well, if anyone has any questions or just wants to chat about blogging in general, please feel free to email me!
After our panel was finished, I stuck around and introduced Heather from Running with Sass for her panel, Social Media: Keeping Up With Online Trends. I learned so much from this discussion! Heather really put a lot of time finding some amazing resources for the session, it was so informative!
After that the sessions were over! A whirlwind day, but such a wonderful experience. I had a little bit of downtime before it was time for dinner with a great group of girls. More on that later!
Hello hello! This morning, me and my lovely roomie Kelly decided that a trip across the river to Boston was a must! She had never been and I wanted to take the open morning for granted and check out some of my favorite Beantown sites. First thing we did was cab it across the river and explore Quincy Market. It was very quiet there, a first for me! Every other time that I have been there it has been mobbed!
We had a great morning in the park. A beautiful way to spend the day! Now we are hanging out a bit before early registration begins…

Good Morning All!! I hope that you have all had a great couple of months. The Fall semester has come to a close and I am officially loving my newly free schedule. I can’t believe I only have another full semester before I am done with the lecture portion of the masters program that I am in! It is flown by!
In the next month there will be a couple of changes here, and I am really excited! I am going to create a blogging schedule (for real this time) and stick to it!my life in photos from the past 2 weeks:
As of late I have enjoyed spending my extra time baking up a couple of batches of these Christmas treats and relaxing. I am so happy to get back into the swing of things, after such a long break I have really missed blogging! Back soon 🙂
