Just Because…

Another semester, more excuses.

I have been out of the blogosphere for a couple of months. This semester feels as though it is infinity more busy than any of the others that I have had. Most of my classes make me brain feel like mush. I am counting the days until it is over (17 more class days!) I realized recently that while I have been out of the loop, I have missed a couple of milestones! My 2 year blogoversary was on October 13th! My 23rd birthday was on Monday, and I even found my first gray hair ( I cried when Chris pulled it out).  I haven’t lost complete interest in blogging, I have just lost the time to do it.

I am around! I am still cooking! These days, you can find most of my eats on Chris’s blog, Poormet (Poor-mey). He has really created an awesome blog, I hope you guys check it out! Sometimes you can even spot me in the background, acting as the hot sauce pourer or whoopie pie stacker. One thing is for sure, I am eating all of his wonderful food.  After the craziness of this semester I am hoping to create some sort of blogging schedule, so please be patient with me!

Capturing Autumn in a Cupcake

Well hello there! If you are reading this, THANK YOU! I haven’t blogged in almost a month. During that time, the fall semester started and my head has been so wrapped up in other things that the last thing on my mind was this blog. I have been looking for the perfect recipe for my “comeback” post and think that this one fits the bill. When I first saw these cupcakes, I knew I had to try them! They are super simple, moist and delicious. Perfect for this time of year!

Pumpkin Apple Cupcakes

Recipe via Liz at Little Bitty Bakes 

Makes 24 cupcakes

  • Prep time: 20 minutes
  • Cook time: 40 minutes

Cupcakes:

  • 1 medium apple (peeled, cored and diced)
  • 1 boxed white cake mix
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground clove
  • 1 1/2 cups canned pumpkin (not pumpkin pie mix)
  • 1 1/3 cups water

Frosting:

  • 1 16-ounce container cream cheese icing
  • 2 tablespoons light maple syrup
  • 1/2 teaspoon ground cinnamon

Heat the oven to 350 degrees F.  Line two cupcake pans with paper liners.

In a small microwave-safe bowl, microwave the apple on high about 1 minute or until tender.  Set aside.

In a large mixing bowl, beat all of the cake ingredients with an electric mixer on high speed 2 minutes.  Fold in the cooked apple pieces.  Spoon the batter into prepared cupcake pan.  Bake the cupcakes about 18 to 20 minutes or until inserted toothpick comes out clean.

Meanwhile, in a small mixing bowl, stir the cream cheese icing, maple syrup, and cinnamon until well blended.  Allow cupcakes to cool completely before frosting

The many positions of Budman

While my eyes were glued to my computer over the last week of school, my Budman has adopted a bunch of fun places to sleep. Usually they are right under my feet. And yesterday, my lovely Christopher put buddy in my clean clothes when I wasn’t looking. 
Thank you to everyone that left me a note the other day. Its been a rough week. Not only have I been laid off, but Chris has too. We work for the same company, and money is obviously tight. Without aid for schools, what we do is basically obsolete. Oh well, here is too the (almost) end of school!
