New York City Adventures

My travel buddy Jen and I headed down to NYC via Megabus on Friday. After arriving at my cousins apartment, we wanted to find lunch fast! We decided that Candle Cafe would be a good choice. I ordered the Mediterranean Wrap. (hummus, tofu feta, roasted red peppers, chopped romaine and sprouts wrapped in a whole wheat tortilla. served with a side of kalamata olive aioli and mesclun salad drizzled with balsamic vinaigrette). I was a little irked by the thought of tofu feta- but everything tasted great!

After our lunch we did a little window shopping and ended up walking around central park. It was a gorgeous day! After meandering around the park for a while, we headed to the Mandarin Oriental in the Time Warner building at Columbus Circle for outrageously expensive cocktails. I ordered the Pink Ginger Cosmo: Belvedere Pink Grapefruit Vodka, Domaine de Canton Ginger Liqueur, Cranberry and Lime Juices. Holy delicious (and STRONG!) By this time Jen and I were looking to put up our feet and relax a bit, so we headed back to battery park where we were staying with my cousin. 

After chatting for a while, we wanted to get some dinner! Jen and I didn’t really want to go far, so we decided to go to Inatteso Pizzabar down the street. I had been there before with Chris a while ago, and remembered everything was awesome!


I ordered a small Toscana pizza which had fresh mozzarella, ricotta, prosciutto, cracked egg and black pepper. I enjoyed it with a class of very very smooth red wine. After dinner we went back to the apartment and feel asleep!

Jen and I really enjoyed the relaxed “no plans” attitude that we had for this trip. It was so refreshing to just go where we wanted and enjoy was around us.

Freihofer’s Run for Women

This past Saturday I completed my second 5k race, the Freihofer’s Run for Women.  I finished with a net time of 32:22. I am not totally thrilled with my time (I was hoping for around 30) but am still happy with it. It skimmed a minute off my previous 5k time during the Turkey Trot this November!

After a very tasty lunch at Brown’s Ale House, I headed home to take a power nap. Then it was BBQ time! Lots of tasty food and fun meant it was time to get jiggy with it 8-)

Did I mention that I got a 3.83 this semester? That called for lots of happy dances. You know what ELSE qualifies? The fact that I am going to my first big girl blogger conference! This August I will be headed to the Healthy Living Summit taking place  in Philadelphia. I am beyond excited to meet all of the fabulous bloggers that I love to read. I am also more motivated than ever to step up my running game!!

Lemon Pound Cake

Ever get an itch to bake something you have never made before?

I was a bakin’ mood last night and had my sights set on pound cake ;-)

Lemon Pound Cake

I used this recipe, but exchanged vanilla extract for lemon.

Whatcha Need:

  • 1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
  • 2 cups all-purpose flour (spooned and leveled), plus more for pan
  • 1 cup sugar
  • 4 large eggs
  • 2 teaspoons pure lemon extract
  • 1/2 teaspoon salt

How to do it:

  1. Preheat oven to 350 degrees. Butter and flour a 6-cup (8 1/2-by-4 1/2-inch) loaf pan; set aside.
  2. Using an electric mixer on high speed, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition; add lemon extract and salt. With mixer on low, gradually add flour, beating just until combined (do not overmix).
  3. Bake until a toothpick inserted in center of cake comes out clean, about 1 hour (tent with aluminum foil if browning too quickly). Let cool in pan 15 minutes. Invert onto a wire rack, and turn upright to cool completely.

Lazy Sunday

Good Afternoon All!

This morning started with a big bowl of multigrain cheerio’s & a bath for my itchy and scratchy butternut.

The dry weather really irritates his skin, and the sound of him itching himself at night irritates me!

I use oatmeal shampoo and oatmeal conditioner on him to help control his itch itch itchness! He doesn’t smell tooo bad either ;-)

The agenda for the rest of the day includes:

Reading the rest of The Mostly True Adventures of Homer P. Figg (for class)

Making sure I understand this daunting pile of books for my book talk tomorrow…

Making a batch of veggie filled orzo for my lunches this week (recipe to come!)

And if  I have time possibly a mani pedi? After this week of reading my eyeballs out I feel like I deserve a treat!

And then the OSCARS!

Beans & Greens

Beans & Greens! This hearty dish is filling and can be altered for specific diets.

Did I mention that it makes a LOT of food for very little money?

Whatcha Need:

  • 1 Bag Frozen Spinach
  • 1 Can cannellini beans
  • 1 (or more) clove garlic
  • Salt & Pepper
  • 2 Whole roasted Red Peppers
  • 1 Italian sausage — Pre cooked!! (You can brown the sausage in the same pan prior to adding the spinach!)
  • Gnocchi

How to do it:

  1. Sauté spinach and garlic until fragrant
  2. Add cannellini beans, sausage & roasted red peppers
  3. Continue cooking, about 5 minutes.
  4. Serve over cooked gnocchi, or any other pasta.
