Good Morning! Are you hungry? Well I have the recipe for you! Wild Harvest, the major sponsor of the Healthy Living Summit this year is having a breakfast showdown! All attendees were given the option to opt into this awesome contest. I jumped at the chance and thought about what I could make using a lot of the ingredients provided. I think that the muffins that I made turned out really well! Warm them in the microwave and add a schmear of butter and you are good to go!
Cherry Vanilla Granola Muffins
- 2 cups all-purpose flour
- 1-1/2 teaspoons cinnamon
- 1-1/2 teaspoons ground allspice
- 1 teaspoon baking soda
- 1 cup sugar
- 1 egg
- 1 tablespoon vanilla extract
- 1/2 cup Wild Harvest Peanut Butter
- 1 cup Wild Harvest applesauce
- 1/2 cup Wild Harvest raisins
- 1/2 cup Wild Harvest Cherry Vanilla Granola
How to do it:
In a bowl, combine flour, cinnamon, allspice and baking soda; set aside. In a mixing bowl, cream peanut butter and sugar. Beat in eggs, applesauce and vanilla; stir into dry ingredients just until moistened. Fold in raisins. Fill greased or paper-lined muffin cups three-fourths full, top with a sprinkle of granola. Bake at 350 degrees F for 20-25 minutes or until muffins test done. Cool in pan 10 minutes; remove to a wire rack.
